For the vibrant green Matcha tea, the tea leaves are shaded before harvest, which stimulates the production of chlorophyll. The leaves are then hand-picked, dried, and ground into a fine powder. To prepare a tea infusion, the green tea powder is poured over with hot water and dissolved by stirring. The advantage of this special preparation is the preservation of valuable ingredients, which include caffeine as well as theobromine, flavonoids, polyphenols, fats, and vitamin C.
